Sauteed Spiralized Butternut Squash

I have to admit something...I love kitchen gadgets. I just got a new one and have been dying to try it out. Enter the KitchenAid spiralizer attachment! There are countertop hand-cranked spiralizers out there as well, but I'm lazy and I'd rather have a machine do the work. This was the first time using it and it turned out pretty good.


1 spiralized butternut squash

1 Tbsp. extra virgin olive oil

2 cups chopped kale

2 cloves garlic, minced

1/2 cup cherry tomatoes, halved

1/2 cup minced onion

2 Tbsp. water

2 tsp. lemon juice


1. Heat oil in large skillet over medium heat. Add squash and toss to coat with oil. Cook for about 2 minutes, tossing several times.

2. Add remaining ingredients, except lemon juice and toss to combine. Cover and cook 3-5 minutes until vegetables have softened and water is mostly evaporated.

3. Add lemon juice and toss to combine.

4. Enjoy!
